Angel Eyes - Christmas cookies with Pelster's nut cream

Who doesn't love it? The cozy Christmas season and the heavenly smell of freshly baked cookies. 🥰 The cookies are not only super delicious, but also easy to prepare. Everything you need to bake them can be found in the following recipe. We hope you enjoy baking them!

Ingredients for about 60 cookies:

🍪 220g spelt flour
🍪 150g blanched and ground almonds
🍪 2 bananas
🍪 150g margarine (room temperature)
🍪 3 tablespoons oat drink (e.g. Pelster's organic oat drink mixed according to the package instructions)

For the chocolate dough:

🍪 2 tablespoons oat drink (e.g. Pelster's organic oat drink mixed according to the package instructions)
 

For the filling:

🍪 200g Pelster's nut cream with dates and cocoa
🍪 or 200g Pelster's nut cream cinnamon roll with dates and cinnamon

Preparation:

1. Mash the bananas in a bowl with a fork until they form a puree.
2. Add the flour and ground almonds and mix well.
3. Now form a small well and add the oat drink and butter. Mix the dough with a fork until you can form a firm and homogeneous ball.
4. Divide the ball into two equal pieces, wrap in cling film and set aside.
5. Now add the chocolate drink powder and the oat drink to the remaining dough.
6. Mix this dough well and then wrap it in cling film and chill both for at least 1 hour.
7. Then mix both doughs together until a marbled pattern is formed.
8. Now form about 60 small balls from the dough and press each one into the middle with your thumb.
9. Place the dough pieces on a baking tray lined with baking paper, leaving enough space between them, and bake at 180°C top/bottom heat for about 12 minutes.
10. Then allow to cool well and then add half a teaspoon of the nut cream into the hollows of the cookies.
