Christmas chocolate cookies without added sugar

Simple cookie cutters for Christmas:



Ingredients for about 20-30 chocolate cookies:


100 g fine Pelster's organic date powder

3 slightly heaped teaspoons of Pelster's organic cocoa powder
250 g spelt flour (e.g. 1/2 type 1050 & 1/2 wholemeal flour)
140 g chilled butter or margarine (vegan alternative)
1 egg (or 1 mashed banana as a vegan alternative)
✨ 50 ml Pelster's organic oat drink


Preparation:

Prepare the dough:

1. Mix the date powder and cocoa powder with the spelt flour in a large bowl.
2. Add butter in small pieces.
3. Add egg (or mashed banana) and the organic oat drink.

4. Work the dough into a smooth mass using your hands or a dough hook. If the dough is too dry, add a little more oat milk until it is easy to knead and shape - it should not crumble or tear.
Tip: If you use whole wheat flour, you will usually need to add a little more oat drink.
5. Wrap the dough in plastic wrap (or an empty Pelster's bag) and let it rest in the refrigerator for 30-60 minutes.

Cutting:

1. Preheat the oven to 175 °C top/bottom heat.
2. Roll out the dough on a lightly floured surface to a thickness of about 5 mm.
3. Cut out cookies as desired and place them on a baking tray lined with baking paper.

Bake:

1. Bake the cookies for about 8-12 minutes, until they are lightly browned at the corners.
2. Remove from the oven and allow to cool completely.

Decorate:


1. Decorate the cooled cookies as desired, e.g. with melted dark chocolate, icing, chopped nuts or colorful sprinkles. If you want to avoid industrial sugar completely, then you can of course leave out the decoration!
