Mango coconut cake

Preparation time: 60 minutes

Ingredients for 8 pieces:

  • 220g mango
  • 10 g Barista oat drink
  • 100 ml water
  • 50 ml maple syrup
  • 30 g coconut oil (melted)
  • 70 g desiccated coconut
  • 120g flour
  • 2 eggs
  • 1.5 tsp baking powder

Preparation:

  1. Puree the mango together with the water and the Barista oat drink powder in a blender.
  2. Now mix with the remaining ingredients and pour into a small baking dish/cake pan.
  3. Optionally sprinkle with a little grated coconut.
  4. Bake at 160 degrees for 40 minutes.
