Mango coconut cake

Mango meets oats and coconut. Perfect with coffee and cake, for a picnic or simply as a fruity dessert. Fresh, juicy and super easy to make. You can also practically feel the freshness of the oat drink.


Preparation time: 60 minutes


Ingredients for 8 pieces:

  • 220 g mango
  • 10 g Barista oat drink powder
  • 100 ml of water
  • 50 ml maple syrup
  • 30 g coconut oil (melted)
  • 70 g coconut flakes
  • 120 g flour
  • 2 eggs
  • 1.5 teaspoons of baking powder

Preparation:

  1. Puree the mango together with the water and the Barista oat drink powder in a blender.
  2. Now mix with the remaining ingredients and pour into a small baking dish/cake tin.
  3. Optionally sprinkle with a little coconut flakes.
  4. Bake at 160 degrees Celsius for 40 minutes.
