Marzipan carrot cake

Ingredients:

For the marzipan:

  • 100 g soft dates
  • 200g almonds
  • A few drops of bitter almond aroma

For the dough:

  • 350 g carrot
  • 1 large apple
  • 400 ml water
  • 40 g organic oat drink
  • 310g flour
  • 50 ml maple syrup
  • 1.5 tsp baking soda
  • 1.5 tsp baking powder
  • 60 ml neutral oil (e.g. rapeseed oil)
  • The core of a vanilla bean or vanilla flavor
  • 1 pinch of salt

Optional:

For the frosting:

  • 200 g (vegan) cream cheese or quark
  • Juice of one lemon
  • 50g powdered sugar
  • chopped pistachios or nuts to garnish

Preparation:

  1. Grind the almonds and crush and mix together with the bitter almond flavor and the soft dates
  2. Grate the carrots and apple and mix with the remaining ingredients for the dough. Bake at 180 degrees for 50 - 60 minutes (stick test).
  3. In the meantime, mix the ingredients for the frosting. Now let the cake cool down, put the frosting on the cold cake and decorate.
