Marzipan carrot cake

Ingredients:

For the marzipan:

  • 100 g soft dates
  • 200 g almonds
  • A few drops of bitter almond flavour

For the dough:

  • 350 g carrot
  • 1 large apple
  • 400 ml water
  • 40 g organic oat drink
  • 310 g flour
  • 50 ml maple syrup
  • 1.5 tsp baking soda
  • 1.5 tsp baking powder
  • 60 ml neutral oil (e.g. rapeseed oil)
  • The core of a vanilla pod or vanilla flavor
  • 1 pinch of salt

Optionally:

For the frosting:

  • 200 g (vegan) cream cheese
  • Juice of one lemon
  • 50 g icing sugar
  • chopped pistachios or nuts to garnish

Preparation:

  1. Grind the almonds and mash them together with the bitter almond flavouring and the soft dates and mix
  2. Grate the carrots and apple and mix with the remaining ingredients for the dough. Bake at 180 degrees for 50 - 60 minutes (use a toothpick to test).
  3. In the meantime, mix the ingredients for the frosting. Now let the cake cool, pour the frosting onto the cold cake and decorate.
