Spaghetti squash

Ingredients for 2 servings:

  • 1 spaghetti pumpkin

For the sauce:

  • 1 pepper
  • 1 carrot
  • 1 red onion
  • clove of garlic
  • 2 tbsp Pelster's Barista oat drink
  • 60ml water
  • Salt pepper
  • Some olive oil


  1. Roughly chop the peppers, onions and garlic and fry them in a little olive oil.
  2. Add water and oat drink powder and mix.
  3. Put everything together in a blender and puree into a sauce with spices of your choice.
  4. Halve lengthwise, remove the seeds and cook in the microwave for 7 minutes at 900 watts. Alternatively, you can cook the pumpkin in the oven (180 degrees fan for about 40 minutes).
  5. Then remove the spaghetti squash (be careful, the squash is hot!) and use a fork to loosen the pumpkin flesh to create the mini spaghetti.
  6. Garnish with the sauce and a few sunflower seeds.
