Easy cookie cutters for Christmas!
Ingredients for about 20-30 cinnamon stars:
- 🎄 80 g fine Pelster's organic date powder
- 🎄 250 g spelt flour (type 1050)
- 🎄 125 g chilled butter or margarine (vegan alternative)
- 🎄 1 egg (or 2 tablespoons applesauce as a vegan alternative)
- 🎄 50 ml Pelster's organic oat drink
Ingredients for the cinnamon topping:
- 🎄 3 tbsp Pelster's organic date powder
- 🎄 1 tbsp cinnamon
Prepare the dough:
1. Mix the date powder with the spelt flour in a large bowl.
2. Add butter in small pieces.
3. Add the egg (or apple sauce) and the oat drink and work the dough into a smooth mass with your hands or a dough hook.
4. If the dough is too dry, add a little more oat drink until it is easy to knead and shape – it should not crumble or tear.
Tip: If you use whole wheat flour, you will usually need to add a little more oat drink.
5. Wrap the dough in plastic wrap (or an empty Pelster's bag) and let it rest in the refrigerator for 30-60 minutes.

Prepare the cinnamon topping:
1. Mix the date powder and cinnamon well
Cutting:
1. Preheat the oven to 175 °C top/bottom heat.
2. Roll out the dough on a lightly floured surface to a thickness of about 5 mm.
3. Cut out stars and roll in the date-cinnamon topping. Place on a baking tray lined with baking paper.
Bake:
1. Bake the cookies for about 8-12 minutes, until they are lightly browned at the corners.
2. Remove from the oven and allow to cool completely.
