Christmas rice pudding

Vegan rice pudding, perfect for the winter and Christmas season. Topped with fresh fruit, it's also a real source of vitamins for cold days! A visual eye-catcher, because you eat with your eyes and a highlight for the next Advent brunch.


Preparation time: 45 min.

Ingredients for one bowl:

  • 65 g rice pudding
  • 250 ml water
  • 2 heaped tablespoons Barista Oat Drink
  • 1 tbsp coconut flakes
  • 1 tbsp sweetener of choice
For the topping:
  • 1 kiwifruit
  • Colorful fruit of your choice, e.g. pomegranate seeds and mango
  • A few coconut flakes

Preparation:

  1. Put all the ingredients in a pot and bring to the boil, stirring constantly. Now turn the heat down to the lowest setting, put a lid on the pot and let it cook for about 30 minutes. Stir occasionally so that the rice pudding doesn't burn.
  2. Then pour the finished rice pudding into a bowl and make a Christmas tree with chopped kiwi. Decorate with the remaining fruit and a few coconut flakes.
